The puff pastry must be laminated with precision — each fold creates layers of butter and dough that, when baked, puff into hundreds of delicate, shattering leaves. Too much butter and the layers merge. Too little and the pastry becomes dense. The temperature must be controlled throughout the process to keep the butter from melting into the dough. It is a labor-intensive, technique-driven process that cannot be rushed or faked.
Our vanilla cream is equally important. We use real Madagascar vanilla beans, whose complex, floral flavor profile is far superior to artificial extracts.
